Note: Using Home Grown LavenderIt’s best to pick the flowers in the morning after the dew has dried. The lavender flowers will be at their best and the scent will be wonderful. You can use any of the varieties, but English Lavender (L.Angustifolia) is particularly good because of its sweeter scent. For this recipe, you really do only need one tablespoon of fresh flowers. Lavender should be used sparingly, or the flavour can become bitter. Drop the individual lavender flowers into a bowl of cold water to remove any stray insects or particles of soil. Rinse them and place on paper towel to dry.
