Hosting a dinner party can often feel like a juggling act but with Chocolate Ice-Cream Cups you're sure to end the night on a high note. Indulge your guests with the decadence of chocolate and the cool, fresh taste of ice-cream blended with fruit.

No-one wants to be in the kitchen when they could be socialising with friends. Chocolate Ice-Cream Cups can be made the day before the party so all that's left to do is pop them on a plate and serve. An easy and inexpensive recipe that tastes delicious. And the kids will love them too.

Ingredients for Chocolate Ice-Cream Cups

  • 200g chocolate buttons (milk or white)
  • vanilla ice-creamfresh fruit (banana, strawberries, lime, mango or pineapple)
  • muffin cases (cupcake cases for children)
  • cooking pot or microwave bowl to melt chocolate
  • glass measuring cup
  • blender
  • metal tray

Makes 8 muffin-size or 16 cupcake-size Chocolate Ice-Cream Cups

How to Make Chocolate Cups

  1. Melt the chocolate by filling the glass measuring cup with chocolate buttons and placing it into a pot of simmering water. Stir the chocolate as it melts, raising or lowering the heat as needed. When the chocolate is melted turn off the heat. Leave the measuring cup in the hot water to prevent the chocolate from hardening.
  2. To create the chocolate shells, hold a muffin case in the palm of your hand and scoop four teasoons of melted chocolate into it. Use the back of the spoon to spread the chocolate evenly over the inside of the case until it is covered right to the edges. Don't make this chocolate layer too thin or it will break when the muffin case is removed.
  3. Place the chocolate-coated muffin case on a tray. Repeat until all the cases are coated in chocolate then place the tray into the fridge so that the chocolate will set.

How to Make Ice-Cream Filling

  1. Place the ice-cream in a blender. Chop and add your choice of fruit. Blend until the mixture is smooth and the fruit and ice-cream are combined.
  2. Take the tray of chocolate cups from the fridge and pour the ice-cream mixture into each shell. Place the tray in the freezer to allow the ice-cream to set. In a few hours your Chocolate Ice Cream Cups will be ready to eat.

For adult guests peel off the muffin cases before serving.
